Smashed Cucumber Feta Salad

The ultimate summer salad has arrived! Cucumbers and “smashed” recipes have taken over our feeds lately — so what happens when you combine the two and add Saputo Feta Cheese? You get this refreshing, tasty salad that’s as easy to make as it is to devour. Crunchy, vitamin-packed and deliciously savoury, it's certain to become the star side dish!

Ingredients

  • 2 whole Lebanese cucumbers
  • 3/4 cup shelled pistachios
  • 1/4 cup fresh dill
  • 2 tbsp olive oil
  • Salt and Pepper, to taste
  • 1 container (200 g) Saputo Feta Cheese
 

Directions

  1. Crumble the Saputo Feta Cheese in a bowl — first with your hands, then with a fork.
  2. Season with olive oil, salt, and pepper to taste. Mix and set aside.
  3. Cut the cucumbers into four sections, then slice each one lengthwise in half. With a large knife (carefully!), smash the cucumber pieces flesh-side up. Slice each piece into bite-sized half-moons.
  4. Roughly chop the pistachios and finely slice the dill.
  5. In a serving bowl, combine the cucumbers, Saputo Feta Cheese, pistachios, and dill. Mix and enjoy a fresh, crunchy bite of summer!
