Baked Feta Pizza With Lemon & Fig

Fresh yet salty and with a slightly tangy taste, Feta cheese is perfect in Greek salads and to enhance the flavours of your favourite Mediterranean meals.

Ingredients
- 1 (250 g) pizza dough ball, at room temperature
For the sauce:
- 1 1/2 cups Saputo Feta Cheese, drained
- 1 1/2 tbsp.lemon oil
- 1 1/2 tbsp. olive oil
- 1 pinch of dried oregano
- 3 garlic cloves, in their skins
- 1/2 preserved lemon, quartered, skins and rind removed
- Salt and pepper to taste
- 5-6tsp.olive tapenade (store bought or homemade)
- 2-3 fresh figs, sliced
- 1 tsp. preserved lemon, finely chopped
- 1 tsp. honey
- Chopped walnuts (optional)
Directions
- Preheat your Ooni pizza oven to 700-800°F.
- Add the feta, oil, oregano, garlic, and preserved lemon to a small roasting tin and cover with foil.
- Bake for 10-20 minutes until the cheese is soft. Crush the softened feta down with the garlic and lemon. If the sauce is too thick, loosen it with a little water or lemon juice.
- Re-preheat your oven to 950˚F (Ooni pizza oven) or 475˚F (conventional oven)
- Stretch out the pizza dough ball and lay it on your lightly dusted pizza peel.
- Spoon 3-4 tbsp. of the feta mix over the base, leaving 3 cm around the crust.
- Add a generous serving of fig slices on top, followed by small dollops of tapenade to taste.
- Transfer the pizza to the oven and cook for 1-2 minutes in an Ooni pizza oven or 10-15 minutes in a conventional oven, at its highest temperature. Turn regularly to ensure an even cook.
- Remove the cooked pizza and top with finely chopped preserved lemon and finish with a drizzle of honey. Sprinkle over chopped walnuts for an optional extra topping
