Barbecue Chicken Pizza with Mozzarellissima & Fresh Mozzarella

Ingredients

  • 1 (250 g) pizza dough ball, at room temperature
  • 3/4 cup Saputo Mozzarellissima Cheese, shredded
  • 1/3 cup Cheddar Cheese, shredded
  • 2/3 cup cooked chicken breast, shredded
  • 1/4 cup Saputo Fresh Mozzarella cheese, torn into small pieces
  • 1/2 cup fresh coriander
  • 1/4 cup of your favourite Canadian brand barbecue sauce
  • 1/4 cup pickled onion rings
  • Extra flour for dusting

Directions

  1. Preheat your oven to 700-800°F (Ooni pizza oven) or 475°F (conventional oven, at its highest temperature).
  2. Stretch your dough on a lightly floured surface. Push the air from the center out toward the crust, then use your knuckles to stretch out the base to around 12”/30cm.
  3. Begin topping your pizza crust by adding a layer of barbecue sauce at the bottom, then sprinkle on the cheese blend. 
  4. Add the chicken and pickled red onions, then transfer your pizza to your oven. 
  5. Let cook for 2 minutes in an Ooni pizza oven or 10-20 minutes in a conventional oven. If using a pizza oven, turn your pizza about every 20 seconds to ensure an even cook.
  6. When finished, remove from the oven and garnish with coriander. 
  7. Slice, serve, and enjoy!
