Set your oven to 400°F (200°C) and allow it to fully preheat.
In separate bowls, toss the beets and sweet potatoes with olive oil, salt, and pepper. Spread them out on individual baking sheets and roast for 35 to 45 minutes, or until fork-tender.
While the vegetables are roasting, whisk together the remaining olive oil, balsamic vinegar, and honey in a small bowl to create the dressing.
Once the roasted vegetables have cooled slightly, arrange a bed of greens on serving plates. Top with the warm vegetables, sprinkle with crumbled Feta and chopped pecans, and drizzle with the balsamic dressing.
