Ricotta Fruit Salad Honey & Mint with Saputo Light Extra Creamy Ricotta

Ingredients

  • 1 tub Saputo Light Extra Creamy Ricotta
  • 30 mL (2 tbsp) honey
  • 5 mL (1 tsp) vanilla extract
  • 250 mL (1 cup) strawberries, hulled and halved
  • 250 mL (1 cup) blueberries
  • 250 mL (1 cup) green grapes, halved
  • 250 mL (1 cup) raspberries
  • 2 peaches, cut in quarters  
  • 2-3 fresh mint leaves, thinly sliced
     

Directions

  1. In a medium bowl, mix the ricotta with honey and vanilla until smooth and creamy.
  2. In a large serving bowl, gently combine the strawberries, blueberries. 
  3. Add dollops of the sweetened ricotta mixture over the fruit.
  4. Sprinkle with mint.
  5. Serve immediately or keep refrigerated for up to 2 hours before serving.
