Dense Bean Salad

This vibrant bean salad brings together tender chickpeas and white beans, juicy cherry tomatoes, crunchy peppers, tangy pepperoncini, savory salami, and creamy Saputo Pearl Bocconcini, all tossed in a zesty homemade dressing with a hint of maple syrup and fresh lemon. Perfect for a light lunch or a colourful side dish that’s as delicious as it is satisfying.

Ingredients

  • 1/2 cup Saputo Pearl Bocconcini
  • 1 cup cooked chickpeas
  • 1 cup cooked white beans
  • 1 cup cherry tomatoes, halved
  • 1/2 red bell pepper, diced
  • 1/2 orange bell pepper, diced
  • 3-4 pepperoncini, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 100 g salami, sliced or torn into bite-sized pieces
 
For the dressing:
  • 3 tbsp.olive oil
  • 1/2 tsp.salt
  • 1 tsp. dried oregano
  • 1 tbsp. maple syrup
  • Juice of 1 lemon
  • 1 tsp. Dijon mustard
  • 1 small garlic clove, minced

Directions

  1. In a small bowl, whisk together the olive oil, salt, oregano, maple syrup, lemon juice, Dijon mustard, and minced garlic until the dressing is well combined.
  2. In a large bowl, combine the chickpeas, white beans, cherry tomatoes, diced red and orange bell peppers, sliced pepperoncini, red onion, fresh parsley, salami, and Saputo Pearl Bocconcini. Toss gently to mix.
  3. Pour the dressing over the bean and vegetable mixture. Toss gently to coat all ingredients evenly with the dressing.
  4. Let the salad sit for at least 15 minutes at room temperature to allow the flavors to meld. Toss once more before serving.
