Meal Prep Pesto Chicken



  • 4 oz (115 g) Saputo Mozzarellissima Lactose Free Cheese
  • 8 tbsp uncooked basmati rice
  • 20 oz (560 g) boneless skinless chicken breast, cut into 1-inch cubes
  • 4 tbsp pesto
  • 4 tbsp plain lactose-free Greek yogurt
  • 1 cup chicken broth
  • 8 oz (225 g) cherry tomatoes
  • Salt and pepper to taste


  1. Preheat the oven to 175ºC (350ºF). 
  2. Place four glass containers, lid removed, on a sheet pan.
  3. Add two tablespoons of basmati rice in each container.
  4. Add approximately 5 oz (140 grams) of boneless skinless chicken breast, 1 tbsp. of pesto and 1 tbsp. of plain lactose-free Greek yogurt to each container.
  5. Add ¼ cup of chicken broth and a pinch of salt and pepper to each container.
  6. Mix all together.
  7. Top each bowl with 2oz of cherry tomatoes and 1 oz of Saputo Lactose Free Mozzarellissima.
  8. Pop the sheet pan with the four containers in the oven and bake for 40 minutes.
  9. Let the bowls cool down and pop the lid back on. 
  10. Store them in the fridge until you’re ready to eat. Enjoy!
