Chicken Parmesan

Ingredients

  • 4 skinless, boneless chicken breasts
  • Salt + Freshly ground pepper
  • 2 eggs
  • ½ cup flour
  • 1 cup Italian bread crumbs
  • ¼  cup Saputo Parmesan
  • ½ cup olive oil
  • 1 ½ cups Marinara sauce
  • 1 cup Saputo Mozzarellissima cheese, grated
  • Fresh basil to garnish

Directions

  1. Place rack in middle of oven and Preheat to 425° F
  2. Prepare 3 bowls, one with flour, one with whisked eggs and one with Italian bread crumbs.
  3. Pound out each chicken breast between heavy plastic (like a zip-lock bag) until even thickness. Season generously with salt and pepper.
  4. One at a time, drench the breasts in flour-tapping off the excess. Dip into the eggs to coat both sides and then drop into bread crumbs and toss around to evenly coat.
  5. Heat 1/2 inch of olive oil in a large skillet over medium-high heat until it begins to simmer. Cook chicken in batches, so you do not overcrowd the pan, until golden, about 2 minutes per side. The chicken will finish cooking in the oven.
  6. Transfer chicken to a baking dish. Top each breast with 1-2 tablespoons tomato sauce. Cover each chicken breast with ¼ cup Saputo Mozzarellissima cheese. Drizzle each with 1/2 teaspoon olive oil.
  7. Bake in preheated oven about 15-20 minutes until cheese is golden and bubbly and chicken is thoroughly cooked. An instant-read thermometer inserted into the center should read at least 165° F.
  8. Let rest and sprinkle with fresh basil before serving.
