Ingredients

For the potato nachos:

  • 6 large yellow-flesh potatoes, cut into wedges
  • 2 tbsp canola oil
  • 1 tbsp cornstarch
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • Pepper, to taste
  • 2 cups pulled pork or shredded tofu
  • 1 red bell pepper, diced
  • 2 green onions, thinly sliced
  • 1/3 cup sliced Kalamata olives
  • 2 cups Saputo Tex-Mex Shredded Cheese

For the cilantro-lime yogurt sauce:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • Zest and juice of 1 lime
  • Pinch of salt

For the mango pico de gallo:

  • 1 cup cherry tomatoes, finely diced
  • 1 ripe mango, finely diced
  • 1/4 white onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • Zest and juice of 1 lime
  • Salt and pepper, to taste

Directions

1. Cut potatoes into wedges and soak in ice water for 15 minutes. Drain and pat dry.

2. Toss potatoes with oil, cornstarch, paprika, oregano, salt, and pepper.

3. Air fry at 400°F for 20 minutes, turning halfway through, until golden and crispy.

4. Meanwhile, blend all yogurt sauce ingredients until smooth. In a separate bowl, combine all pico de gallo ingredients.

5. Transfer potatoes to an air fryer-safe tray or parchment-lined basket. Top with pulled pork or tofu, bell pepper, green onions, olives, and Saputo Tex-Mex Shredded Cheese.

6. Air fry for 5 to 10 minutes, until the cheese is melted.

7. Top with the yogurt sauce and mango pico de gallo. Serve immediately.
