Italians call Mozzarella pasta filata ("stretchy cheese"). Originally made in Southern Italy, Mozarella is now the most popular unripened semi-soft cheese in Canada. It is an ideal cheese for cooking owing to its elasticity and its ability to evenly cover an au gratin dish as it melts.
Mozzarella is used in pizzas and au gratin dishes, as well as in sandwiches and many other recipes.
