The most famous cheese in its country of origin, Parmigiano Reggiano comes from Emilia-Romagna, a region north of Italy. The unpasteurised milk used to produce this cheese comes from cows that are feed alfalfa, giving this cheese its unique taste. Parmigiano Reggiano ages for at least 24 months and a whole block of this cheese weighs about 66 lb (30 kg).
